Healthy Delicious Chocolate Muffins

As I prepped for my small gender reveal gathering with my coworkers, I wanted to bring in something that meshed with my reputation as a Nutritionist instead of the store bought sugar and flour laden status quo. This recipe was perfect, and was a total hit! Since I was asked by so many for the recipe, it's time to blog!

My delicious gluten free chocolate healthy muffins!

Healthy Delicious Chocolate Muffins

In a large bowl:

1 and 1/2 ripe avocados (puree this on its own first, with a food processor/hand blender/immersion until smooth)

Then add the rest, either to your food processor or blender:

3 tbsp almond oil

1 tsp vanilla extract (non-alcoholic)

2 and 1/2 tbsp. of coconut cream (leave your coconut milk can in the fridge overnight and this will be what's on top, or you can specifically buy coconut cream)

3 tbsp honey (or fruit puree/liquid sweetener of choice for vegan)

2 local free range eggs at room temperature (or 2 tbsp milled flaxseed and 6 tbsp water for vegan option)

In a separate bowl, mix up the following gently with a whisk or fork:

1/2 cup chopped pecans or nut of your choice

2 cups almond flour

1/4 cup cocoa or carob powder

1 tsp baking soda

1/2 tsp salt

1/3 cup chocolate chips (I used Enjoy Life Dairy Free Dark Chocolate Chips)

Preheat oven to 350F.

Add your wet ingredients to your dry bowl and mix it all together with a spatula until it's evenly mixed, and don't overdo it.

Spoon into your silicone baking cups or lightly greased cast iron muffin pans.

Bake for 30-40 minutes; all ovens are different so check at 30 minutes and if a toothpick doesn't come out clean keep them in longer. Be aware that this test can cause false positives; if you stick into a melted chocolate chip you'll still think they're not done! So poke a few areas if you think you speared a choco chip.

Now go enjoy these guilt free, no refined sugar, no gluten and no dairy! I stuck a yogurt covered pretzels inside of mine for the gender reveal but once you bit into it you couldn't really tell it was a pink raspberry colour, LOL.
